The biggest modification after making this crispy delicacy twelve times over the course of three months was switching out the xanthan gum for gelatin. Although tasty, the xanthan gum version was a little sticky, reminding everyone seated at the table that they were consuming a "light dessert." In contrast, the gelatin version was merely a dessert. And that was the upper limit.
These delicious, crunchy apple-flavored treats are perfect for the keto diet. They're easy to make, low in carbs ( with only 4.8 grams of net carbs), have a spoon-sticky filling, and a topping that crackles when broken with a fork. It's one of those recipes that makes the keto diet feel sustainable, not restrictive.
